COMBINATION NOODLES NOOD
SERVES 4 PREP 10 MINS COOK 10 MINS PER SERVE 1065kj
1 tbsp canola oil
200g pork fillet, thinly sliced
250g green prawns, peeled, deveined
1 onion, sliced
1 tbsp red curry paste
1 bunch choy sum, chopped
100g oyster mushrooms
2 tbsp soy sauce
1 tbsp dry sherry
440g packet hokkein noodles, rinsed (see tip) sliced red chilli, to serve
1 In a wok or large frying pan, heat oil on high. Stir-fry pork 1-2 mins until well browned. Remove from pan.
2 Add prawns to same wok and stir-fry 1-2 mins until they change colour completely. Remove from pan.
3 In same wok, stir-fry onion 1 min. Add curry paste and stir-fry a further 1 min until fragrant. Toss vegetables, sauces and sherry through. Stir-fry 1 min.
4 Return pork and prawns to wok with noodles. Stir-fry 2-3 mins to heat through. Serve straight away topped with chilli. TOP TIP Place noodles in a colander and pour some just-boiled water over. Gently separate strands with tongs. Drain well.
