PEA & HUMMUS SMASH TOAST

SERVES 2 PREP + COOK 10 MINS PER SERVE 1535kj COST $$$$$ ½ cup drained, rinsed canned salt-reduced chickpeas ½ cup frozen peas, thawed 1 green onion, sliced thinly ¼ cup loosely packed mint leaves 1 tbsp lemon juice 2 tsp tahini 1 garlic clove, crushed ½ tsp ground cumin ½ tsp boiling water 2 x 40g slices soy and linseed bread, toasted 50g yellow grape tomatoes, halved 25g reduced-fat fetta, crumbled 1 tbsp seed-and-nut mix (see tip) 2 tbsp micro cress (optional) 2 tsp extra-virgin olive oil

1 Process chickpeas, peas, green onion, mint, lemon juice, tahini, garlic, cumin and boiling water until smooth. Season with pepper.

2 Spread pea mixture thickly over toast. Top with tomato, fetta, seed mix and cress, if using. Drizzle with oil, to serve.
