ORANGE & POMEGRANATE STEAMED PUDDINGS
SERVES 2 PREP + COOK 45 MINS PER SERVE 845kj COST $$$$$
2 ½ tbsp brown sugar ½ orange, segmented 1 small egg 2 ½ tbsp wholemeal self-raising flour 1 tbsp almond meal 1 tbsp orange juice 1 tbsp pomegranate seeds 1 tbsp low-fat custard, to serve
1 Grease and line the bases of two ¾-cup dariole moulds or ramekins with baking paper.
2 Sprinkle 2 tsp of the sugar on the base of the moulds and top evenly with orange segments.
3 Beat remaining sugar and the egg in a small bowl with an electric mixer for 2 mins or until thick and creamy. Fold in remaining ingredients, except custard.
4 Divide mixture between moulds, cover with a layer of pleated foil and baking paper, and secure with kitchen string.
5 Place puddings in a medium saucepan with enough boiling water to come halfway up the sides of moulds. Cover with a tight-fitting lid and simmer for 25 mins. Stand puddings for 5 mins. Serve each pudding with 2 tsp custard.
