BERRY SEMOLINA PORRIDGE

1 cup skim milk ½ cup water 1 tsp vanilla extract pinch ground cinnamon 1/ cup semolina 3 1 cup frozen mixed berries, thawed ¼ cup low-fat Greek yoghurt 2 tbsp chopped raw pistachios 2 tsp honey

1 In a medium saucepan, combine milk, water, extract and cinnamon on medium. Bring to the boil. Gradually add semolina. Whisk 2 mins or until thick. Remove from heat, stir in 2/ cup berries. 3 2 Serve porridge topped with yoghurt, nuts, honey and remaining berries.
