CHEESY CHEESY BALLS BALLS WITH ITALIAN COLESLAW
SERVES 4 PREP 25 MINS COOK 35 MINS PER SERVE 2021kj
2 tsp olive oil 2 onions, sliced 1 zucchini, roughly chopped 2 cloves garlic, sliced 400g can diced tomato 1 cup water 3 tsp dried oregano 200g fetta, crumbled
1/ cup grated tasty cheese 3 ½ cup dried breadcrumbs 1 egg, lightly beaten ½ tsp grated nutmeg
ITALIAN COLESLAW
½ white cabbage, finely sliced ½ cup parsley leaves, chopped ¼ cup parmesan cheese ¼ cup olive oil 1 lemon, grated zest, juice
1 Preheat oven to moderate, 180°C. 2 In a frying pan, heat oil on high. Saute onion, zucchini and garlic 1-2 mins. Add tomatoes, water and 2 tsp oregano.
3 In a large bowl, combine cheeses, breadcrumbs, remaining oregano, egg and nutmeg. Shape tbsps mixture into balls.
4 Pour vegetable mixture into an ovenproof dish. Place balls into dish. Bake, covered, 20 mins. Uncover, cook 5-10 mins.
5 ITALIAN COLESLAW Toss all salad ingredients together. Season.
6 Serve cheesy balls with sauce and coleslaw.
