Sesame beef power bowl

Celebrate the Commonweal­th Games by eating like an athlete! Indulge in a healthy Australian beef recipe straight from the Women’s Sevens menu plan

Preheat oven to 220°C. Combine 400g jasmine rice and enough water to cover by 1.5cm in a saucepan, bring to boil, reduce heat to low, cover with lid and cook for 12 mins. Remove from heat, covered, and stand for 5 mins. Meanwhile, toss 1 bunch broccolini, 1 tbsp soy sauce and 1 tbsp sesame oil in a baking tray lined with baking paper. Season with black pepper. Repeat with 200g green beans in a separate tray, then roast both until tender and beginning to brown on the edges. Heat 2 tbsp vegetable oil in a wok over high heat, add 2 tbsp finely grated ginger and 2 cloves garlic, crushed and stir-fry until fragrant. Add 200g shiitake mushrooms, stir-fry to wilt, add 500g beef mince and brown. Stir in 80ml Chinese cooking wine and 100ml soy sauce, add 150ml beef stock and simmer to reduce by half. Stir in 2-3 thinly sliced spring onions, 3 tbsp rice vinegar and 2 tbsp sesame oil and serve on steamed rice with roast broccolini and beans.
