60g baby spinach leaves 60g baby rocket leaves 1½ cups roasted mixed vegetables (recipe left) 420g can chickpeas, rinsed 200g creamy fetta, crumbled ½ cup cashews, toasted
1⁄ cup sliced green 3 olives ½ cup coriander sprigs
2 tbsp olive oil 1 tbsp lemon juice 1 tbsp Dijon mustard 1 In a large bowl, combine spinach, rocket, vegetables, chickpeas, fetta, cashews, olives and coriander sprigs. 2 DRESSING In a jug, whisk oil, juice and mustard. 3 Toss dressing through the salad.
