MEDITER­RANEAN SAUSAGE ROLLS WITH TOMATO & OLIVE SALAD

1/ cup pesto

3 1/ cup fresh bread­crumbs

3 2 sheets puff pas­try, thawed and halved 4 thin pork sausages 1 egg, lightly beaten

TOMATO & OLIVE SALAD

1 red onion, sliced in rounds 2 toma­toes, cut into wedges ½ cup pit­ted black olives 2 cups mixed salad leaves 2 tbsp olive oil 1 tbsp lemon juice

1 Pre­heat oven to mod­er­ate, 180°C. Lightly grease and line an oven tray with bak­ing pa­per.

2 In a small bowl, com­bine pesto and bread­crumbs. Spread along cen­tre of each pas­try half. Top each with a sausage. Brush one end with egg and roll pas­try to en­close fill­ing tightly, press­ing seal firmly. Trim any ex­cess pas­try.

3 Place sausage rolls tray, seam side down. Brush with egg. Bake 15-20 mins un­til pas­try is crispy and golden.

4 TOMATO & OLIVE SALAD In a bowl, toss all in­gre­di­ents to­gether. Sea­son. Serve with sausage rolls.
