MEDITERRANEAN SAUSAGE ROLLS WITH TOMATO & OLIVE SALAD
SERVES 4 PREP 15 MINS COOK 20 MINS PER SERVE 3239kj
1/ cup pesto
3 1/ cup fresh breadcrumbs
3 2 sheets puff pastry, thawed and halved 4 thin pork sausages 1 egg, lightly beaten
TOMATO & OLIVE SALAD
1 red onion, sliced in rounds 2 tomatoes, cut into wedges ½ cup pitted black olives 2 cups mixed salad leaves 2 tbsp olive oil 1 tbsp lemon juice
1 Preheat oven to moderate, 180°C. Lightly grease and line an oven tray with baking paper.
2 In a small bowl, combine pesto and breadcrumbs. Spread along centre of each pastry half. Top each with a sausage. Brush one end with egg and roll pastry to enclose filling tightly, pressing seal firmly. Trim any excess pastry.
3 Place sausage rolls tray, seam side down. Brush with egg. Bake 15-20 mins until pastry is crispy and golden.
4 TOMATO & OLIVE SALAD In a bowl, toss all ingredients together. Season. Serve with sausage rolls.
