CRUSTED SALMON

2 cups fresh breadcrumb­s 1 cup grated parmesan ½ cup chopped parsley finely grated zest 1 lemon, on, plus wedges to serve 2 x 300g packets Tassal Tasmanian fresh salmon, skin off

1 Preheat oven to hot, 220°C. Line an oven tray with baking paper.

2 In a large bowl, combine breadcrumb­s, parmesan, parsley and lemon zest. Season and mix well. Drizzle in enough olive oil to lightly bind.

3 Arrange salmon on tray. Press on crumb mixture evenly. Drizzle with a little more oil.

4 Bake 10-15 mins until salmon flakes easily when tested with a fork and crumb is golden. Serve with lemon and salad, if you like.
