CRUSTED SALMON

2 cups fresh bread­crumbs 1 cup grated parme­san ½ cup chopped pars­ley finely grated zest 1 le­mon, on, plus wedges to serve 2 x 300g pack­ets Tas­sal Tas­ma­nian fresh salmon, skin off

1 Pre­heat oven to hot, 220°C. Line an oven tray with bak­ing paper.

2 In a large bowl, com­bine bread­crumbs, parme­san, pars­ley and le­mon zest. Sea­son and mix well. Driz­zle in enough olive oil to lightly bind.

3 Ar­range salmon on tray. Press on crumb mix­ture evenly. Driz­zle with a lit­tle more oil.

4 Bake 10-15 mins un­til salmon flakes eas­ily when tested with a fork and crumb is golden. Serve with le­mon and salad, if you like.
