1 onion, finely chopped 500g beef mince 700ml jar tomato pas­sata a with basil 200g mush­rooms, chopped e eded 1½ cups shell pasta

1 Spray a large saucepan with olive oil. Saute onion 2-3 mins on high un­til ten­der.

2 Add mince. Cook, break­ing up lumps, 4-5 mins un­til well browned.

3 Stir in pas­sata and mush­room. Rinse pas­sata jar with 1 cup wa­ter, stock or wine and add to saucepan. Bring to boil.

4 Re­duce heat to low. Mix in pasta. Sim­mer 15-20 mins, stir­ring oc­ca­sion­ally, un­til pasta is ten­der. Sea­son to taste.

5 Serve sprin­kled with chopped flat-leaf pars­ley and grated parme­san, if you like.
