GLUTEN-FREE AN­ZAC BIS­CUITS

✦✦ 1 cup quinoa flakes ✦✦ 1 cup gluten-free flour ✦✦ ¾ cup des­ic­cated co­conut ✦✦ ½ cup caster sugar ✦✦ 125g un­salted but­ter ✦✦ 2 tbsp golden syrup ✦✦ 1 tbsp hot wa­ter ✦✦ 1 tsp bi­car­bon­ate of soda

1 Pre­heat oven to mod­er­ately slow, 160°C. Grease and line two oven trays with bak­ing paper.

2 In a large bowl, com­bine quinoa flakes, flour, co­conut and sugar.

3 In a saucepan, com­bine but­ter and golden syrup. Cook on low 2 mins un­til melted and com­bined. In a small bowl, com­bine wa­ter and bi­carb. Add bi­carb mix­ture and but­ter mix­ture to dry in­gre­di­ents. Stir un­til com­bined.

4 Roll level ta­ble­spoons of mix­ture into balls, then flat­ten slightly. Ar­range on pre­pared trays 3cm apart to al­low room for spread­ing. Bake 10 mins un­til golden. Cool on trays.
