BA­SIC COOKIE DOUGH

MAKES 20 PREP + COOK 25 MINS + REFRIGERATION & COOL­ING

125g but­ter, soft­ened ½ cup firmly packed brown sugar 1 tsp vanilla ex­tract 1 egg 1 ¼ cups gluten-free plain flour 2 tbsp white rice flour ½ tsp bi­car­bon­ate of soda 1 tsp xan­than gum

1 Pre­heat oven to 180°C. Grease two oven trays and line with bak­ing paper.

2 In a medium bowl, us­ing an elec­tric mixer, beat but­ter, sugar and ex­tract un­til just com­bined. Add egg, beat un­til just com­bined. Stir in sifted flours, soda and gum, in two batches. Re­frig­er­ate, cov­ered, for 1 hour.

3 Us­ing wet hands, roll tb­sps of mix­ture into balls, place 5cm apart on trays, flat­ten slightly.

4 Bake cook­ies for 18 mins or un­til golden. Cool on trays.
