BASIC COOKIE DOUGH
MAKES 20 PREP + COOK 25 MINS + REFRIGERATION & COOLING
125g butter, softened ½ cup firmly packed brown sugar 1 tsp vanilla extract 1 egg 1 ¼ cups gluten-free plain flour 2 tbsp white rice flour ½ tsp bicarbonate of soda 1 tsp xanthan gum
1 Preheat oven to 180°C. Grease two oven trays and line with baking paper.
2 In a medium bowl, using an electric mixer, beat butter, sugar and extract until just combined. Add egg, beat until just combined. Stir in sifted flours, soda and gum, in two batches. Refrigerate, covered, for 1 hour.
3 Using wet hands, roll tbsps of mixture into balls, place 5cm apart on trays, flatten slightly.
4 Bake cookies for 18 mins or until golden. Cool on trays.
