SAUSAGE & POTATO BAKE

SERVES 4 PREP 10 MINS COOK 30 MINS PER SERVE 2239kj

2 onions, sliced 8 Ital­ian sausages 400g mi­crowave baby pota­toes with herbs and but­ter ½ cup tomato sauce ¼ cup Worces­ter­shire sauce

1 Pre­heat oven to mod­er­ate, 180°C. Lightly grease a large bak­ing dish. 2 Place onion in base of dish. Ar­range sausages over the top. 3 Pre­pare pota­toes fol­low­ing packet in­struc­tions. Cut into wedges and place over sausages.

4 In a jug, stir to­gether sauces. Make up to 1 cup with wa­ter or red wine. Sea­son. Pour over sausage mix­ture.

5 Bake 25-30 mins, turn­ing and bast­ing oc­ca­sion­ally, un­til sausages are cooked through and sauce thick­ens. Serve with salad, if you like.
