SPICED MEATBALL WRAPS

SERVES 4 PREP 25 MINS COOK 15 MINS + CHILLING PER SERVE 3030kj

✦ 2 tbsp oil ✦ 1 onion, finely sliced ✦ 2 garlic cloves, crushed ✦ 1 tsp ground cumin ✦ ½ tsp each ground cinnamon, coriander ✦ ½ tsp dried oregano ✦ 500g lamb mince ✦ 4 pita breads, warmed ✦ mixed salad and hummus, to serve COUSCOUS SALAD ✦ 1 cup couscous ✦ 1 cup boiling water ✦ ½ bunch mint leaves, chopped ✦ ½ bunch parsley leaves, chopped ✦ 2 tomatoes, seeded, chopped ✦ ½ red onion, finely chopped ✦ 1 garlic clove, crushed

1 In a large frying pan, heat half the oil on medium. Saute onion and garlic 2-3 mins. Add spices and oregano and saute 1-2 mins until fragrant. Transfer to a bowl. Cool slightly, then combine with mince and shape into 12 balls. Cover and chill 30 mins.

2 COUSCOUS SALAD Meanwhile, place couscous in a heatproof bowl. Pour over water. Set aside, covered, 5 mins. Fluff with a fork. Cool, then stir in remaining ingredient­s. Season.

3 In same frying pan, heat remaining oil on medium. Cook meatballs, turning, 8-10 mins until well browned and cooked through.

4 Top each pita with a large spoonful of couscous salad and 3 meatballs. Serve with salad and hummus.
