BRESAOLA PARCELS FILLED WITH GOAT’S CHEESE & CHIVES
SERVES 2 PREP 10 MINS
120g soft goat’s cheese
1 tbsp extra-virgin olive oil, plus extra for drizzling handful of chives, finely chopped sea salt and freshly ground black pepper
8 small slices of bresaola (about 50g in total) juice
8 whole chives, soaked rocket leaves, to serve
1 In a bowl, combine cheese, olive oil and chives, seasoning with salt and pepper until creamy.
2 Place bresaola on a board and squeeze a little lemon juice over.
3 Place a small dollop of the creamy cheese mixture on each slice and wrap like a little parcel. Tie a soaked chive around each parcel to hold everything in place.
4 Serve with rocket leaves, a drizzle of extra-virgin olive oil and another drizzle of lemon juice.
