BRESAOLA PARCELS FILLED WITH GOAT’S CHEESE & CHIVES

120g soft goat’s cheese

1 tbsp ex­tra-vir­gin olive oil, plus ex­tra for driz­zling hand­ful of chives, finely chopped sea salt and freshly ground black pep­per

8 small slices of bresaola (about 50g in to­tal) juice

1 lemon

8 whole chives, soaked rocket leaves, to serve

1 In a bowl, com­bine cheese, olive oil and chives, sea­son­ing with salt and pep­per un­til creamy.

2 Place bresaola on a board and squeeze a lit­tle lemon juice over.

3 Place a small dol­lop of the creamy cheese mix­ture on each slice and wrap like a lit­tle par­cel. Tie a soaked chive around each par­cel to hold every­thing in place.

4 Serve with rocket leaves, a driz­zle of ex­tra-vir­gin olive oil and an­other driz­zle of lemon juice.
