ROASTED PUMP­KIN & SPINACH GAR­LIC TOASTS

700g pump­kin, cut into 1.5cm pieces 1½ tbsp olive oil 40g baby spinach leaves 1 quan­tity Gar­lic Bread Toast ½ cup shaved parme­san 2 tbsp bal­samic glaze

1 Pre­heat oven to 180°C. Line an oven tray with bak­ing pa­per. Place pump­kin on pre­pared tray. Driz­zle with oil. Bake 20 mins un­til ten­der. Al­low to cool slightly, toss with spinach. Top Gar­lic Bread Toast with pump­kin mix­ture and parme­san. Driz­zle with bal­samic glaze.
