4 zuc­chini, cut into thin rib­bons 2 cloves gar­lic, crushed 2 tsp lemon juice 2 tbsp chopped chives 250g smooth ri­cotta 1 quan­tity Gar­lic Bread Toast 16 slices salami, halved 1 tbsp grated lemon zest

1 Heat a char­grill pan on medium. Cook zuc­chini, in batches,

2 mins un­til cooked. Com­bine zuc­chini, gar­lic, juice and chives. Spread ri­cotta on Gar­lic Bread Toast. Top with salami, zuc­chini mix­ture and zest.
