ROASTED PUMPKIN & SPINACH GARLIC TOASTS
MAKES 16 PREP 10 MINS COOK 20 MINS
700g pumpkin, cut into 1.5cm pieces 1½ tbsp olive oil 40g baby spinach leaves 1 quantity Garlic Bread Toast ½ cup shaved parmesan 2 tbsp balsamic glaze
Preheat oven to 180°C. Line an oven tray with baking paper. Place pumpkin on prepared tray. Drizzle with oil. Bake 20 mins until tender. Allow to cool slightly, toss with spinach. Top Garlic Bread Toast with pumpkin mixture and parmesan. Drizzle with balsamic glaze.
