CHEESY BACON, PEA & CORN PENNE

300g small penne 200g rindless bacon, finely chopped 300ml light cream 100g reduced-fat spreadable cream cheese, at room temperatur­e ½ cup boiling water 1 small chicken stock cube 1 cup frozen pea and corn mix, thawed 2 green onions, thinly sliced 1¾ cups grated pizza cheese, plus ¾ cup extra

1 Preheat oven grill to high. In a large saucepan of boiling salted water, cook pasta 10 mins until tender. Drain.

2 Meanwhile, in a large non-stick frying pan, cook bacon on medium 3 mins until browned. Add cream, cream cheese, water and crumbled stock cube. Bring to boil. Reduce heat. Add pea and corn mix and onion. Cook 2 mins until heated and combined.

3 Add pasta and cheese to cream mixture, mix well. Spoon into 4 x 2-cup ovenproof serving bowls. Top with extra cheese. Place under grill, cook 3 mins until golden brown.
