SWEET POTATO & SALAMI TORTILLA
SERVES 4 PREP 20 MINS COOK 25 MINS PER SERVE 1902kj
✦ 2 tbsp olive oil
✦ 300g orange sweet potato, peeled, thinly sliced
✦ 1 red onion, thinly sliced
✦ 100g salami, thinly sliced
✦ 100g baby spinach leaves
✦ 8 eggs, lightly beaten
✦ ½ cup grated tasty cheese
✦ salad, toasted baguette, to serve
1 Preheat oven grill on high. 2 Heat oil in a deep 22cm ovenproof frying pan on high. Fry sweet potato, turning, 4-5 mins until tender. Remove from pan.
3 Add onion and salami to same pan. Cook 2-3 mins until onion is tender. Arrange sweet potato and spinach over onion.
4 Pour egg over vegetables and season to taste. Shake pan gently, allowing egg to seep through. Sprinkle with cheese.
5 Cook over low heat 5-6 mins until base and sides are set. Place under grill 8-10 mins until top is set and cheese is golden. Rest 2 mins. Serve in wedges with salad and toast.
