DIY muesli bars

Melt 100g butter, 1/ cup honey 3 and 2 tbsp caster sugar in saucepan on low. Stir until sugar dissolves. Turn heat to medium, bring to boil, simmer 1-2 mins until slightly thickened.

In a large bowl, combine 2 cups rolled oats, 1 cup rice bubbles, ½ cup sultanas, ½ cup chopped dried apricots, ½ cup chopped almonds, ¼ cup each pepitas, sunflower seeds and sesame seeds. Pour syrup mixture, stir to combine. Press into greased, lined 20 x 30cm slice pan. Bake at 180°C, 10-15 mins.

Cool totally in pan. Chill 2 hours. Cut into fingers to serve. Store in an airtight container.
