If you ‘have a dream’ to visit a Greek island and fall in love with the food, these dishes will make your tastebuds sing

SAGANAKI PRAWNS SERVES 4 PREP 25 MINS COOK 20 MINS

✦ ¼ cup olive oil

✦ 1 red onion, sliced

✦ 4 tomatoes, chopped

✦ 2 tbsp oregano leaves, plus extra to serve

✦ 1 tsp sugar

✦ ½ cup white wine

✦ 500g large green prawns, peeled, deveined, heads and tails intact

✦ ¼ cup ouzo (see tip)

✦ 200g fetta, crumbled

✦ lemon halves, bread, to serve

1 Heat half the oil in a large flameproof casserole dish on medium. Cook onion 3-4 mins until tender.

2 Add tomato, oregano and sugar. Cook 3-4 mins, stirring, until tomato begins to soften. Stir in wine and bring to a simmer. Cook 2-3 mins until reduced by half. Remove from heat and set aside.

3 Preheat grill on high.

4 Meanwhile, heat remaining oil in a large frying pan on medium. Cook prawns 30 secs each side until they just begin to change colour. Add ouzo to pan, stirring, then remove from heat.

5 Transfer prawns and pan juices to tomato mixture, mixing well. Season to taste. Scatter over fetta. Grill 4-5 mins. Sprinkle with extra oregano leaves. Serve with lemon halves and bread.
