TARAMASALATA WITH CHARGRILLED VEGETABLES
SERVES 6 PREP 10 MINS
✦ 4 small slices wood-fired bread (about 100g), crusts removed
✦ ½ cup milk
✦ 2 cloves garlic, crushed
✦ 2 small eschalots, finely chopped
✦ 100g tarama (cod roe)
✦ ½ cup light olive oil
✦ 2 tbsp lemon juice
✦ chargrilled vegetables, grilled flatbread, olives, to serve
1 Place bread in a medium bowl. Pour milk over bread and stand 5 mins. Squeeze bread dry, discarding milk, then place in a food processor with garlic, eschalot and tarama. Process until well combined.
2 With the motor running, gradually add oil in a thin stream. Add juice and process until smooth and creamy, adding a little hot water, if necessary. Season to taste with freshly ground black pepper.
3 Serve with chargrilled vegetables, flatbread and olives.
