CHICKEN & MUSHROOM PIES
SERVES 4 PREP 10 MINS COOK 35 MINS PER SERVE 1346kj
✦ 1 tbsp olive oil
✦ 1 onion, thinly sliced
✦ 2 tsp thyme leaves
✦ 3 single chicken breast fillets, cut into 2cm pieces
✦ 200g Swiss brown mushrooms, sliced
✦ 2 cups skim milk, plus 1 tbsp extra
✦ 2 tbsp cornflour
✦ 4 green onions, chopped
✦ 4 sheets filo pastry
✦ olive oil spray
✦ salad, to serve
1 Preheat oven to 200°C. Place 4 x 1-cup ovenproof dishes on an oven tray.
2 In a medium frying pan, heat oil on medium. Cook onion and thyme 2 mins. Add chicken and mushroom, in batches, and cook 4-5 mins each batch until golden. Transfer to a bowl.
3 In a small saucepan, mix ½ cup of milk with cornflour until smooth. Add remaining milk and green onion. Stir constantly on medium heat 2-3 mins until sauce boils and thickens. Simmer 3 mins. Season to taste.
4 Remove from heat and stir chicken mixture through. Divide evenly between dishes.
5 Spray each sheet of filo with oil, then scrunch and place on top of chicken mixture to cover.
6 Bake 15-20 mins until pastry is golden. Serve pies with salad.
