TURKEY CHILLI
SERVES 4 PREP 20 MINS COOK 1 HOUR 5 MINS PER SERVE 1639kj
✦ 1 tbsp olive oil
✦ 1 chorizo sausage, finely chopped
✦ 1 onion, chopped
✦ 2 garlic cloves, crushed
✦ 500g turkey mince
✦ 1 red capsicum, seeded, chopped
✦ 1 fresh long red chilli, thinly sliced
✦ 2 tsp ground cumin
✦ 2 tsp chopped oregano
✦ 1 tsp ground coriander
✦ 1½ cups beef stock
✦ 1½ cups passata
✦ 400g can 3 bean mix, rinsed, drained
✦ coriander leaves, chopped avocado, light sour cream, toasted tortillas, chopped tomatoes, jalapenos, to serve
1 In a large saucepan, heat oil on high. Cook chorizo, onion and garlic 4-5 mins until onion is tender. Add mince and brown, breaking up lumps, 3-4 mins.
2 Add capsicum, chilli and spices. Cook, stirring, 5 mins.
3 Mix in stock, passata and beans. Bring to boil on high. Reduce heat to low and simmer, covered, 45-50 mins until meat is tender and sauce has thickened slightly.
4 Sprinkle with coriander. Serve chilli with avocado, sour cream, tortilla, tomato and jalapenos.
