CINNAMON MERINGUE APPLE PIE
SERVES 8 PREP 5 MINS COOK 50 MINS + STANDING ✦ 800g frozen apple pie ✦ 4 egg whites, at room temperature ✦ 1 cup caster sugar ✦ 1 tsp cinnamon ✦ caramel top’n’fill, to drizzle
1 Preheat oven to 200°C. Arrange apple pie on an oven tray. Bake following packet instructions.
2 In a bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add caster sugar, 1 tbsp at a time, until sugar has dissolved and meringue is thick and glossy. Stir through cinnamon.
3 Quickly top hot pie with cinnamon meringue. Bake 10 mins until meringue is golden. Set aside 10 mins. Serve drizzled with caramel.
