FROZEN STRAWBERRY CHEESECAKE
SERVES 12 PREP 10 MINS + OVERNIGHT FREEZING
✦ 250g tub spreadable cream cheese ✦ 2 tbsp icing sugar, sifted, plus extra to serve ✦ 1 litre strawberries & cream ice-cream, softened ✦ ½ cup toasted slivered almonds, plus extra to serve ✦ 250g strawberries, half chopped ✦ ½ x 450g store-bought rectangular sponge slab ✦ blueberries, to serve 1 Line the base and sides of a straight-sided 22cm x 7.5cm rectangular pan, extending paper 10cm from edges to form handles.
2 In a bowl, combine cream cheese and icing sugar. Stir through ice-cream with almonds and chopped strawberries.
3 Cut sponge in half widthways. Trim to fit base of pan. Top sponge with half the ice-cream mixture. Repeat layering with remaining sponge and ice-cream.
4 Freeze overnight until set. Halve remaining strawberries. Serve frozen cheesecake topped with halved strawberries, extra slivered almonds and blueberries. Serve dusted with icing sugar.
