SERVES Trim away any green outer leaves from 1 large cauliflowe­r head. Chop a little off stem. Cut cauliflowe­r into rough 5cm chunks. In a large saucepan, cook chunks in boiling water for 10 mins, or until a small knife can be easily inserted through cauliflowe­r chunks. Remove from heat and drain very well. Return cauliflowe­r chunks to pan without heat. Drizzle with olive oil. Add finely grated zest and juice of 2 lemons, 2 large handfuls of chopped toasted skinless hazelnuts and 1 ½ large handfuls of chopped flat-leaf parsley. Mash with a potato masher until well combined, but leave a little texture. Make sure oil is mixed through. Season to taste with salt and pepper. Spoon into a large bowl. Sprinkle with half a handful chopped flat-leaf parsley and ground pepper, if you like.
