SERVES Trim away any green outer leaves from 1 large cauliflower head. Chop a little off stem. Cut cauliflower into rough 5cm chunks. In a large saucepan, cook chunks in boiling water for 10 mins, or until a small knife can be easily inserted through cauliflower chunks. Remove from heat and drain very well. Return cauliflower chunks to pan without heat. Drizzle with olive oil. Add finely grated zest and juice of 2 lemons, 2 large handfuls of chopped toasted skinless hazelnuts and 1 ½ large handfuls of chopped flat-leaf parsley. Mash with a potato masher until well combined, but leave a little texture. Make sure oil is mixed through. Season to taste with salt and pepper. Spoon into a large bowl. Sprinkle with half a handful chopped flat-leaf parsley and ground pepper, if you like.
