COCONUT, ALMOND & GINGER BARS
MAKES 8 PREP 10 MINS COOK 15 MINS + STANDING
✦ 2 cups coconut flakes ✦ 1 cup blanched almonds, toasted, roughly chopped ✦ ½ cup shredded coconut ✦ 1 tsp ground ginger ✦ ½ cup honey ✦ 1 tsp vanilla bean paste
1 Preheat oven to 180°C. Line a 26cm x 18cm slice pan with baking paper.
2 In a bowl, combine coconut flakes, almonds, shredded coconut and ginger. Stir in honey and vanilla until combined.
3 Transfer to prepared pan, pressing down with the back of a teaspoon to flatten slightly.
4 Bake 15 mins until golden. Set aside, at room temperature, 1 hour until firm.
5 Cut into 8 bars to serve.
