ASIAN-STYLE BEEF SHORT RIBS
SERVES 4 2 kg beef short ribs handful coriander leaves sesame seeds, to garnish
SWEET CHILLI MARINADE
½ cup firmly packed dark brown sugar 3 garlic cloves, peeled 2 large red chillies, seeded, small chunks 7-8 French shallots, roughly chopped 5 cm fresh ginger, peeled, roughly chopped 2 tbsp fish sauce
1 Preheat oven to 150ºc.
2 SWEET CHILLI MARINADE Add ingredients to a food processor and blend into a smooth paste.
3 Place ribs in a baking dish. Pour marinade over and use your hands to rub it into meat until well coated. Cover dish with double layers of foil and seal tightly.
4 Bake 2 ½-3 hours, or until beef is super tender and about to detach from bone. Rest 30 mins.
5 Heat a barbecue grill to medium. Pour pan juices from beef into a jug and skim off excess fat. Place ribs on barbecue. Basting with pan juices frequently, grill ribs 2-3 mins, each side, until caramelised.
6 Remove from grill and drizzle with remaining pan juices. Garnish with coriander and sesame seeds to serve.
