CHORIZO HASH WITH FRIED EGGS SERVES 4 PREP 10 MINS COOK 25 MINS PER SERVE 3342kj ✦ 500g potatoes, peeled, chopped ✦ ¼ cup olive oil, plus extra one tbsp ✦ 3 chorizo sausages, roughly chopped ✦ 1 onion, thinly sliced ✦ ½ cabbage, finely shredded ✦ 4 eggs ✦ chopped parsley, to serve ✦ 4 slices sourdough bread, chargrille­d

1 In a large saucepan, cover potato with cold water. Bring to boil on high. Reduce heat to medium, then simmer 6-8 mins until just tender. Drain and set aside.

2 In a large frying pan, heat oil on high. Cook chorizo 2 mins until beginning to brown. Add potato and onion. Cook, stirring, 8-10 mins until golden. Mix in cabbage and cook, stirring occasional­ly, 3-4 mins until soft. Season.

3 Meanwhile, in a frying pan, heat extra oil on medium. Fry eggs 2-3 mins until cooked to your liking.

4 Serve hash topped with a fried egg and sprinkled with parsley. Accompany with chargrille­d sourdough. TIP When frying eggs, crack them into the hot oiled pan. Cook on high until the white is firm. If preferred, turn to cook the yolk through.
