1 Slice 1 each red, green and yellow capsicum, removing seeds. Thinly slice 2 zucchini and 2 finger eggplants. Halve 125g button mushrooms.

2 Brush vegetables with oil. Chargrill on high for 2-4 mins each side. Slice capsicum into strips. Transfer vegetables to a bowl with 3 garlic cloves.

3 MARINADE In a jug, whisk 1 cup olive oil, zest 2 lemons, 2/ cup lemon juice, 2 tbsp 3 parsley, thyme sprigs and sliced chilli. Season.

4 Divide vegetables evenly among sterilised jars. Pour marinade over vegetables then seal well and chill for up to a week.
