STIR-FRY TURKEY WITH BASIL & FRIED EGG

SERVES 4 PREP 15 MINS COOK 20 MINS

¹⁄ cup sweet chilli sauce 1½ tbsp fish sauce 1½ tbsp lime juice, plus wedges to serve ¼ cup vegetable oil 4 eggs 4 cloves garlic, crushed 1 long red chilli, thinly sliced (optional) 500g turkey mince (see tip) 150g green beans, trimmed, halved 2 tbsp fish sauce, extra 2 tbsp brown sugar 1 cup Thai basil leaves 1 butter lettuce, leaves separated, washed, dried 1 In a small bowl, combine sauces and juice. Set aside.

2 In a wok or frying pan, heat 2 tsp of the oil on high. Fry eggs, 1 at a time (adding oil for each), 1-2 mins each until edges are golden and crinkled but yolk is still runny. Transfer to a plate and keep warm.

3 Heat remaining oil in same wok on high. Stir-fry garlic and chilli (if using) 1 min. Add turkey mince and stir-fry, breaking up lumps, 4-5 mins until browned. Add beans, extra fish sauce and sugar. Stir-fry 1-2 mins. Remove from heat. Toss basil through.

4 Serve turkey in lettuce cups, topped with egg and drizzled with prepared chilli sauce. Accompany with lime wedges.
