LAMB KOFTAS

SERVES 4 PREP 20 MINS COOK 40 MINS + CHILLING PER SERVE 1933kj

500g lamb mince ½ cup couscous, cooked 1 small onion, finely chopped ¼ cup chopped coriander grated zest and juice 1 lemon 1 egg, beaten 2 garlic cloves, crushed 1 birdseye chilli, seeds removed, finely chopped 2 tsp ground coriander 16 wooden skewers, soaked 1 tbsp olive oil pita bread, natural yoghurt, lemon cheeks, to serve

SALAD

250g cherry tomatoes, quartered 1 bunch parsley, leaves chopped juice 1 lemon 2 tbsp olive oil

1 Preheat oven to 200°C. Line a large oven tray with baking paper.

2 In a bowl, combine mince, couscous, onion, coriander, lemon zest and juice, egg, garlic, chilli and coriander. Season.

3 Using clean, wet hands, shape 2 tablespoon­s of mixture into sausage shapes around each skewer. Place on a plate. Chill 20 mins.

4 SALAD In a bowl, toss ingredient­s together.

5 In a large frying pan, heat oil on high. Cook koftas, in batches, turning, 5 mins until browned. Transfer to an oven tray. Bake 20-25 mins until cooked through. Serve with salad, pita bread, yoghurt and lemon cheeks.
