THE ULTIMATE ROCKY ROAD
MAKES 10 PIECES PREP 10 MINS COOK 5 MINS + CHILLING
200g milk chocolate, chopped 200g dark chocolate, chopped ½ x 250g packet Scotch Finger biscuits, roughly broken 1 cup white marshmallows, halved 2 x 55g bars Turkish Delight, chopped ½ cup pistachios, roughly chopped
1 Line base and sides of a straight-sided 22cm x 7.5cm bar pan with baking paper, extending paper over edges for handles.
2 In a large heatproof bowl over a saucepan of simmering water, melt milk and dark chocolate together until smooth.
3 Reserve a few Scotch Fingers, marshmallows, some Turkish Delight and pistachios to sprinkle on top of rocky road. Gently fold remaining ingredients into chocolate. Transfer to prepared pan, then tap pan on bench to level mixture. Sprinkle with reserved ingredients.
4 Chill 2 hours until set. Cut into 10 pieces to serve.
