CHOC CHUNK CHEESECAKE

SERVES 12 PREP 15 MINS COOK 55 MINS + COOLING & CHILLING

✦ 1 quantity base cookie dough (see recipe) ✦ 500g cream cheese, softened ✦ ²⁄ 3 cup icing sugar ✦ 2 tsp vanilla extract ✦ 3 eggs ✦ 200g dark chocolate, chopped ✦ cocoa, to dust

1 Preheat oven to 180°C. Line a lamington pan with baking paper, extending paper over edges.

2 Reserve ¼ cup cookie dough and chill until needed. Press remaining dough over base of pan. Bake 15 mins.

3 Meanwhile, in a large bowl, using an electric mixer, beat cream cheese, sugar and vanilla until smooth. Beat in eggs, one at a time. Gently stir through chocolate chunks. Spoon mixture over biscuit base. Crumble over reserved chilled cookie dough.

4 Bake 40 mins until mixture is almost set. Turn oven off. Cool cheesecake in oven, with door slightly ajar, 2 hours. Chill. Serve dusted with cocoa.
