BA­CON SAUSAGES WITH HOT POTATO SALAD

SERVES 4 PREP 30 MINS COOK 50 MINS PER SERVE 2560kj

✦ 750g pota­toes, peeled, cut into wedges ✦ 50g but­ter, melted ✦ 2 tbsp olive oil ✦ 1 small onion, chopped ✦ 1 gar­lic clove, crushed ✦ 1 sprig rose­mary, leaves chopped ✦ 8 thick pork sausages ✦ 4 thin ba­con slices, halved length­ways ✦ ¹⁄ 3 cup cran­berry jelly ✦ 2 tbsp tomato sauce ✦ 1 tbsp white wine vine­gar ✦ steamed beans, to serve (see tip) 1 Pre­heat to 200°C. 2 In a roast­ing pan, com­bine potato, but­ter, oil, onion, gar­lic and rose­mary. Toss well and sea­son to taste. Bake 30-40 mins un­til golden brown and ten­der.

3 Mean­while, wrap each sausage in a strip of ba­con. Place in a bak­ing dish. Add to oven af­ter 20 mins of potato cook­ing time.

4 In a small bowl, com­bine jelly, sauce and vine­gar. Brush lib­er­ally over sausages. Bake a fur­ther 10 mins.

5 Serve sausages and potato with beans.

TIP To pre­pare the beans, trim and steam in a steamer bas­ket over sim­mer­ing water for a minute or two, or plunge into boil­ing water for the same amount of time.
