BACON SAUSAGES WITH HOT POTATO SALAD

SERVES 4 PREP 30 MINS COOK 50 MINS PER SERVE 2560kj

✦ 750g potatoes, peeled, cut into wedges ✦ 50g butter, melted ✦ 2 tbsp olive oil ✦ 1 small onion, chopped ✦ 1 garlic clove, crushed ✦ 1 sprig rosemary, leaves chopped ✦ 8 thick pork sausages ✦ 4 thin bacon slices, halved lengthways ✦ ¹⁄ 3 cup cranberry jelly ✦ 2 tbsp tomato sauce ✦ 1 tbsp white wine vinegar ✦ steamed beans, to serve (see tip) 1 Preheat to 200°C. 2 In a roasting pan, combine potato, butter, oil, onion, garlic and rosemary. Toss well and season to taste. Bake 30-40 mins until golden brown and tender.

3 Meanwhile, wrap each sausage in a strip of bacon. Place in a baking dish. Add to oven after 20 mins of potato cooking time.

4 In a small bowl, combine jelly, sauce and vinegar. Brush liberally over sausages. Bake a further 10 mins.

5 Serve sausages and potato with beans.

TIP To prepare the beans, trim and steam in a steamer basket over simmering water for a minute or two, or plunge into boiling water for the same amount of time.
