CHEESY SAUSAGE ROLLS

MAKES 16 PREP 15 MINS COOK 20 MINS

✦ 5 sheets filo pastry ✦ 100g butter, melted, cooled ✦ 1 cup finely grated parmesan, plus ½ cup extra ✦ 500g packet good-quality Italian sausages, meat squeezed from casings ✦ 1 cup fresh breadcrumb­s ✦ ¼ cup picked rosemary sprigs ✦ tomato chutney, mixed salad, to serve

1 Preheat oven to 200°C. Line 3 oven trays with baking paper.

2 Arrange 1 sheet of pastry on a board. Brush with butter and one-fifth of the parmesan. Repeat layers with remaining filo, butter and parmesan. Cut pastry into quarters.

3 In a bowl, combine sausage mince and breadcrumb­s. Place a quarter of mince mixture along centre of pastry. Roll to enclose. Cut into quarters. Arrange, seam-side down, on prepared trays. Brush with remaining butter.

4 Sprinkle extra parmesan and rosemary over rolls. Bake 20 mins until golden and cooked through. Serve with chutney, mixed salad and extra rosemary.
