CHICKEN PARMA SAUSO ROLLS
MAKES 16 PREP 15 MINS COOK 25 MINS + COOLING
✦ 1 tbsp olive oil ✦ 1 brown onion, finely chopped ✦ 2 cloves garlic, crushed ✦ 1 tsp dried oregano ✦ ¼ cup basil, roughly chopped, plus extra leaves to serve ✦ 500g chicken mince ✦ 1 cup fresh breadcrumbs, plus ½ cup extra ✦ 2 x 50g sachets pizza sauce ✦ 2 sheets frozen puff pastry, thawed, halved ✦ 1 cup grated mozzarella ✦ ½ cup finely grated parmesan ✦ warmed passata, to serve 1 In a frying pan, heat oil on medium. Cook onion 5 mins. Add garlic. Cook 1 min. Stir in oregano and basil. Cool slightly.
2 In a large bowl, combine mince, onion mixture and breadcrumbs. Season.
3 Spread 1 tbsp of pizza sauce on a pastry piece. Top with a quarter of the mince mixture. Press a quarter of the mozzarella on top of mince. Brush edges with a little egg. Roll up. Repeat with remaining ingredients.
4 Arrange on prepared trays. Brush top with egg, then top with combined extra breadcrumbs and parmesan. Bake 15 mins until golden and cooked through. Serve topped with a little extra warmed passata and basil leaves.
