EASY PAELLA SERVES 4 PREP 10 MINS COOK 30 MINS

2 tbsp olive oil 1 onion, finely chopped 2 cloves gar­lic, crushed 200g can ham, diced 1 cured chorizo, sliced

2 cups ar­bo­rio rice 1 litre (4 cups) chicken stock pinch saffron threads 12 frozen peeled cooked prawns, thawed ¹⁄ cup frozen peas, 3 thawed ¹⁄ cup char­grilled 3 cap­sicum strips, drained

pars­ley leaves, lemon wedges, to serve (op­tional)

1 Heat oil in a large fry­ing pan on high. Cook onion and gar­lic 2 mins un­til soft.

2 Add ham and chorizo. Cook 2 mins un­til golden brown. Stir in rice, coat­ing grains in oil.

3 Add stock and saffron. Sim­mer, cov­ered, on low heat 20 mins un­til liq­uid is ab­sorbed.

4 Scat­ter prawns, peas and cap­sicum over the top. Cook, cov­ered, a fur­ther 5 mins.

5 Sprin­kle with pars­ley and serve with lemon wedges, if you like.
