Take a closer look in your cupboard for some secret ingredients
EASY PAELLA SERVES 4 PREP 10 MINS COOK 30 MINS
2 tbsp olive oil 1 onion, finely chopped 2 cloves garlic, crushed 200g can ham, diced 1 cured chorizo, sliced
2 cups arborio rice 1 litre (4 cups) chicken stock pinch saffron threads 12 frozen peeled cooked prawns, thawed ¹⁄ cup frozen peas, 3 thawed ¹⁄ cup chargrilled 3 capsicum strips, drained
parsley leaves, lemon wedges, to serve (optional)
1 Heat oil in a large frying pan on high. Cook onion and garlic 2 mins until soft.
2 Add ham and chorizo. Cook 2 mins until golden brown. Stir in rice, coating grains in oil.
3 Add stock and saffron. Simmer, covered, on low heat 20 mins until liquid is absorbed.
4 Scatter prawns, peas and capsicum over the top. Cook, covered, a further 5 mins.
5 Sprinkle with parsley and serve with lemon wedges, if you like.
