PAN-FRIED FISH WITH BROCCOLI MASH

SERVES 4 PREP 10 MINS COOK 15 MINS PER SERVE 2548kj

✦ 750g potatoes, peeled, chopped ✦ 2 heads broccoli, chopped ✦ ¹⁄ 3 cup milk ✦ 2 tbsp vegetable oil ✦ 4 x 200g fish fillets ✦ 50g butter, chopped ✦ 1 lemon, zest finely grated, juiced ✦ 125g cherry tomatoes, halved ✦ snipped chives, to serve

1 In a large saucepan of boiling salted water, cook potatoes 12-15 mins until tender, adding broccoli in final 5 mins. Drain. Return to heat. Add milk, then mash until smooth. Season.

2 Meanwhile, in a large non-stick frying pan, heat oil on medium. Cook fish 2-3 mins each side until cooked through. Transfer to a plate and cover loosely with foil to keep warm. Melt butter in same pan on medium. Toss through zest, juice and tomato.

3 Serve mash topped with fish and tomato mixture. Sprinkle with chives.
