BROCCOLI, GARLIC & TUNA PASTA BAKE

✦ 500g penne pasta ✦ 2 heads broccoli, roughly chopped ✦ 6 eggs ✦ 600ml thickened cream ✦ 425g can tuna in oil, drained ✦ 60g spinach leaves ✦ 3 green onions, sliced ✦ 2 garlic cloves, crushed ✦ ¼ cup finely grated parmesan ✦ rocket leaves, to serve 1 Preheat oven to 180°C. Grease a 12-cup baking dish.

2 In a large saucepan of boiling salted water, cook pasta following packet instructio­ns, adding broccoli in final 2 mins. Drain.

3 In a large bowl, lightly whisk eggs and cream. Stir through pasta, broccoli, tuna, spinach, onion and garlic. Season to taste.

4 Transfer to prepared dish. Sprinkle with parmesan. Bake 30-35 mins until bubbling and golden. Sprinkle with rocket to serve.
