MEATBALLS & CAPSICUM FATTOUSH

200g ciabatta, sliced, torn into bite-sized pieces 500g pork sausages, one end dipedd snipped 330g jar roasted capsicum, m, drained, roughly chopped 1 red onion, thinly sliced 1 large cucumber, chopped d
1 Preheat oven to 180°C. Line an oven tray with baking paper. 2 Spray bread with olive oil. Bake 5-10 mins until golden and toasted. Set aside to cool.
3 Meanwhile, squeeze meat from sausage casings. Roll meat into balls. Arrange on tray.
4 Heat a frying pan on high. Spray with olive oil. Cook meatballs, turning, 10-12 mins until golden all over and cooked through. Drain on paper towel.
5 In a large bowl, toss capsicum, onion, cucumber, croutons and meatballs together. Season.
