SPEEDY SATAY CHICKEN NOODLES

✦ 750g chicken breasts, trimmed, sliced thickly

✦ ²⁄3 cup satay sauce

✦ 4 x 75g packet 2-minute mi goreng noodles

✦ 2 cucumbers, chopped

✦ ed d 4 green onions, finely sliced, tips shredded

1 In a medium bowl, combine chicken, half the satay sauce, noodle seasoning sachets and a little vegetable oil. Mix well.

2 Heat a chargrill pan or barbecue plate on high. Grill chicken 2-3 mins each side until golden brown and cooked through.

3 Meanwhile, cook noodles following packet instructio­ns. Rinse under cold water and drain well.

4 Divide noodles between bowls. Top with chicken, combined cucumber and sliced onion. Finish with shredded onion tips and some sliced red chilli and coriander leaves, if you like. Accompany with remaining warmed sauce.
