TOMATO & SQUASH PIZZAS

SERVES 4 PREP 15 MINS COOK 5 MINS PER SERVE 3107kj

2 large pizza bases (see tip)

¹⁄ cup basil and cashew

3 pesto dip

4 zucchini with flowers attached, thinly sliced, flowers removed

2 yellow squash, thinly sliced 2 tbsp olive oil

1 tbsp lemon juice

400g medley tomatoes, sliced

250g buffalo mozzarella, drained, torn

¼ cup seed and nut mix (sunflower seeds, pepitas and pine nuts), toasted small basil leaves, to serve

1 Heat a barbecue or chargrill pan on high. Cook pizza bases 1-2 mins each side until grill marks appear.

2 Spread pesto over each base. In a bowl, toss zucchini and squash in half the oil and juice. Season.

3 Top bases evenly with vegetables, tomato and mozzarella.

4 Scatter with zucchini flowers, seed mix and basil. Drizzle with remaining oil and season. TIP You can use Lebanese bread instead of pizza bases.
