GINGER & CHOC CHIP BANANA BREAD

SERVES 8 PREP 10 MINS COOK 1 HOUR 2 cups self-raising flour 2 tsp ground ginger 1 tsp ground cinnamon ½ cup brown sugar 4 very ripe bananas, mashed 125g butter, melted, cooled 2 eggs, lightly beaten

1/ cup milk 3 1 tsp vanilla extract ½ cup choc chips Preheat oven to moderate, 180°C. Lightly grease and line a 11 x 21cm loaf pan.

2 Sift flour, ginger and cinnamon together into a large bowl. Stir in sugar. Make a well in centre of mixture.

3 In a bowl, combine banana, butter, eggs, milk and vanilla. Pour into flour mixture. Gently stir to combine. Stir through choc chips. Pour mixture into prepared pan.

4 Bake 50-55 mins, covering with foil if over-browning, until cooked when tested with a skewer. Cool in pan 5 mins before turning onto a wire rack to cool completely.
