POWER UP DINNERTIME!

Pack your weeknight plate with more of the good stuff using these healthy meal ideas ORANGE SWEET POTATO, PROSCIUTTO & MOZZARELLA FLATBREADS

SERVES 4 PREP + COOK 45 MINS

400g orange sweet potato, thinly sliced 8 chia mountain bread wraps 1 cup finely grated parmesan 8 slices prosciutto, torn ¼ cup fresh sage leaves 2 tsp finely grated lemon zest 250g smoked mozzarella, thinly sliced 70g baby rocket leaves 1½ tbsp balsamic vinegar 1 tbsp olive oil 4 large fresh figs, quartered

1 Preheat oven to 220°C. Line 4 oven trays with baking paper.

2 Cook sweet potato in boiling water 5 mins until tender. Drain.

3 Place 4 wraps on trays. Sprinkle with parmesan. Top with remaining wraps, then sweet potato, prosciutto, sage, zest and mozzarella. Bake, in two batches, 12 mins until golden and crisp.

4 Combine rocket, vinegar and oil in a large bowl. Divide figs and rocket mixture between flatbreads.
