TOFFEE BRITTLE MAKES 18 PREP + COOK 35 MINS + STANDING + REFRIGERATION
✦ 250g butter, coarsely chopped ✦ 1 cup caster sugar ✦ 2 tsp water ✦ 1 tsp vanilla extract ✦ 180g dark chocolate, chopped ✦ ²⁄ cup roasted unsalted 3 shelled pistachios, finely chopped
1 Stir butter, sugar and water in a medium heavy-based saucepan over low heat until sugar dissolves and butter melts. Bring to boil. Boil, stirring occasionally, until toffee reaches 155°C on a sugar thermometer. Remove pan from heat, then allow bubbles to subside. Stir in vanilla.
2 Drop tablespoons of the toffee mixture onto 2 trays lined with baking paper or foil. Stand toffee mixture until set.
3 Place chocolate in a medium heatproof bowl over a medium saucepan of simmering water (don’t let water touch base of bowl). Stir until smooth.
4 Dip toffee rounds into chocolate, then coat in nuts. Return to trays. Refrigerate until chocolate is set.
