CO­CONUT ICE

MAKES 64 SQUARES PREP 20 MINS + RE­FRIG­ER­A­TION

✦ 5¼ cups ic­ing su­gar ✦ 2½ cups des­ic­cated co­conut ✦ 395g can sweet­ened con­densed milk ✦ 1 egg white, lightly beaten ✦ pink and peach food colour­ing

1 Grease a 19cm square cake pan. Line base and sides with bak­ing pa­per, ex­tend­ing pa­per 5cm over sides.

2 Sift ic­ing su­gar into a large bowl. Stir in co­conut, then con­densed milk and egg white un­til al­most com­bined. Use your hands to fin­ish com­bin­ing the in­gre­di­ents well.

3 Di­vide mix­ture into 2 bowls. Tint one mix­ture with pink and peach colour­ing. Press coloured mix­ture into pan. Level sur­face. Top with re­main­ing mix­ture. Level sur­face.

4 Chill, cov­ered, 3 hours. Cut into squares to serve.
