MAKES 64 SQUARES PREP 20 MINS + REFRIGERATION
✦ 5¼ cups icing sugar ✦ 2½ cups desiccated coconut ✦ 395g can sweetened condensed milk ✦ 1 egg white, lightly beaten ✦ pink and peach food colouring
1 Grease a 19cm square cake pan. Line base and sides with baking paper, extending paper 5cm over sides.
2 Sift icing sugar into a large bowl. Stir in coconut, then condensed milk and egg white until almost combined. Use your hands to finish combining the ingredients well.
3 Divide mixture into 2 bowls. Tint one mixture with pink and peach colouring. Press coloured mixture into pan. Level surface. Top with remaining mixture. Level surface.
4 Chill, covered, 3 hours. Cut into squares to serve.
