MARSHMALLO­W TREATS

MAKES 55 PREP + COOK 30 MINS + COOLING + REFRIGERAT­ION

✦ 200g butter ✦ 395g can sweetened condensed milk ✦ 1 cup firmly packed brown sugar ✦ ¼ cup cocoa powder ✦ 2 tsp vanilla extract ✦ 375g plain sweet biscuits, crushed ✦ 300g pink and white marshmallo­ws ✦ 1½ cups desiccated coconut

1 Stir butter, condensed milk, sugar, sifted cocoa and vanilla in a medium saucepan over low heat until smooth. Remove from heat. Stir in biscuit crumbs. Cool to room temperatur­e.

2 With damp hands, roll 3 heaped teaspoons of biscuit crumb mixture around each marshmallo­w, pressing firmly to enclose marshmallo­ws. Refrigerat­e 30 mins until firm.

3 Roll balls in coconut, then place on trays lined with baking paper.
